Ils font partie des l\u00e9gumes oubli\u00e9s. On les appelle aussi \u00ab\u00a0truffes du Canada\u00a0\u00bb ou encore \u00ab\u00a0artichauts de J\u00e9rusalem\u00a0\u00bb et il est vrai que leur go\u00fbt s&rsquo;en rapproche un peu avec un petit go\u00fbt de noisette en plus. C&rsquo;est en tout cas un tr\u00e8s bon potage d&rsquo;hiver.<\/p>\n<p><em>500 gr de topinambours, ou 700 si vous comptez les \u00e9plucher (ce qui n&rsquo;est pas n\u00e9cessaire), 500 gr de bouillon de poule, une belle \u00e9chalote, 3-4 branches de thym, de l&rsquo;huile d&rsquo;olive ou du beurre, 5 tranches de pata negra, 1\u00a0cuill\u00e8re\u00a0\u00e0 caf\u00e9 de bicarbonate de sodium, du sel et du poivre.<\/em><\/p>\n<p>Pr\u00e9parer un bouillon de poule. Pendant que \u00e7a bout, laver les \u00e9plucher les topinambours (j&rsquo;avoue que c&rsquo;est un peu casse-t\u00eate, mais soyez un peu patient-e-s, \u00e7a en vaut la peine), les laver et les d\u00e9couper en deux ou trois. Eplucher l&rsquo;\u00e9chalote et la hacher grossi\u00e8rement. Faire chauffer dans une casserole l&rsquo;huile ou le beurre et y faire dorer les topinambours et l&rsquo;\u00e9chalote pendant cinq minutes, puis ajouter le bouillon, le bicarbonate ainsi que les \u00e9pices et laisse cuire pendant une vingtaine de minutes \u00e0 couvert \u00e0 feu doux. Dix minutes avant la fin, mettre les tranches de pata negra \u00e0 cuire dans le four \u00e0 200\u00b0 jusqu&rsquo;\u00e0 les rendre totalement croustillantes. Lorsque les topinambours sont cuits, mixer le potage. Dans un bol, \u00e9mietter les tranches de pata negra.
