Sa qualit\u00e9 participe pleinement \u00e0 notre sant\u00e9, mais aussi, plus largement, \u00e0 notre bien-\u00eatre. Car bien manger est un plaisir: plaisir des sens, plaisir de la convivialit\u00e9 d&rsquo;un repas partag\u00e9 avec ses proches. Facette importante de notre culture, l&rsquo;alimentation est riche de sp\u00e9cialit\u00e9s, de techniques, d&rsquo;appellations d&rsquo;origine, de traditions, d\u2019artisans qui font de la Belgique une r\u00e9f\u00e9rence reconnue en mati\u00e8re de gastronomie.<\/span><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\"><!--more--><\/span><\/span><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\">Au cours de ces derni\u00e8res d\u00e9cennies, notre alimentation a fortement \u00e9volu\u00e9. Cette \u00e9volution a eu des cons\u00e9quences positives. Pensons par exemple \u00e0 la diversit\u00e9 des saveurs qui se trouvent d\u00e9sormais dans notre assiette. Mais nous ne pouvons le cacher, avec \u00e9galement des cons\u00e9quences n\u00e9gatives sur notre environnement et notre sant\u00e9: <\/span><\/span><\/p>\n<p><span style=\"font-size: small;\"><span style=\"font-family: Arial, sans-serif;\">\u00b7<\/span><span style=\"font-family: Arial, sans-serif;\"> <\/span><span style=\"font-family: Arial, sans-serif;\">L\u2019intensification de la production alimentaire et le recours syst\u00e9matique \u00e0 des engrais chimiques et \u00e0 des pesticides ont des cons\u00e9quences sur la pollution des sols et des eaux comme sur le r\u00e9chauffement climatique et la biodiversit\u00e9<\/span><\/span><\/p>\n<p><span style=\"font-size: small;\"><span style=\"font-family: Arial, sans-serif;\">\u00b7<\/span><span style=\"font-family: Arial, sans-serif;\"> <\/span><span style=\"font-family: Arial, sans-serif;\">L&rsquo;ob\u00e9sit\u00e9 touche de plus en plus d&rsquo;enfants \u2013 et d\u2019adultes; <\/span><\/span><\/p>\n<p><span style=\"font-size: small;\"><span style=\"font-family: Arial, sans-serif;\">\u00b7<\/span><span style=\"font-family: Arial, sans-serif;\"> <\/span><span style=\"font-family: Arial, sans-serif;\">Le nombre de personnes allergiques \u00e0 des aliments a progress\u00e9 au cours de ces derni\u00e8res ann\u00e9es passant de 1% de la population en 1970 \u00e0 plus de 6% aujourd\u2019hui. En outre, nous constatons une augmentation des allergies s\u00e9v\u00e8res. En Angleterre par exemple, les chocs anaphylactiques ont progress\u00e9 de 700% en 17 ans.<\/span><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\">Depuis quelques ann\u00e9es, de plus en plus de Belges entendent davantage ma\u00eetriser leur alimentation. Ils veulent en effet \u00eatre mieux inform\u00e9s et se conduire, non en simples consommateurs, mais en acteurs \u00e0 part enti\u00e8re de l&rsquo;alimentation. Ils veulent pouvoir trouver sur le march\u00e9 des produits correspondant davantage \u00e0 leurs besoins et attentes.<\/span><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\">La Commission communautaire fran\u00e7aise, avec ses diff\u00e9rents instituts, a une place importante \u00e0 prendre en mati\u00e8re d&rsquo;alimentation. En tant que pouvoir organisateur d&rsquo;\u00e9tablissements scolaires formant aux m\u00e9tiers de bouche, nous avons notamment la possibilit\u00e9 de former et de sensibiliser les acteurs de la fili\u00e8re et les futurs professionnels, qu&rsquo;ils travaillent dans un snack, un restaurant ou une cuisine de collectivit\u00e9, sur les risques li\u00e9s \u00e0 l&rsquo;allergie alimentaire, d&rsquo;informer le plus grand nombre de personnes du secteur sur la pr\u00e9vention \u00e0 mettre en place et d&rsquo;enseigner les r\u00e8gles l\u00e9gales d&rsquo;\u00e9tiquetage. Cette place, nous entendons la prendre en profitant de la chance unique que nous avons sur ce campus qui rassemble le CIRIHA, des futurs chefs, di\u00e9t\u00e9ticiens, gestionnaires de l&rsquo;environnement urbain et j&rsquo;en passe.<\/span><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\">En tant que Pr\u00e9sident du Conseil d&rsquo;administration de la Haute \u00c9cole Lucia de Brouck\u00e8re et Ministre-Pr\u00e9sident de la COCOF en charge de l&rsquo;Enseignement, mon intention est d&rsquo;amplifier les synergies entre nos diff\u00e9rents \u00e9tablissements. C&rsquo;est ainsi par exemple:<\/span><\/span><\/p>\n<p><span style=\"font-size: small;\"><span style=\"font-family: Arial, sans-serif;\">\u00b7<\/span><span style=\"font-family: Arial, sans-serif;\"> <\/span><span style=\"font-family: Arial, sans-serif;\">qu&rsquo;un livret de recettes \u00ab\u00a0alimentation durable\u00a0\u00bb sortira d&rsquo;ici la fin de l&rsquo;ann\u00e9e. Ce livret est le fruit d&rsquo;une collaboration entre nos diff\u00e9rents instituts;<\/span><\/span><\/p>\n<p><span style=\"font-size: small;\"><span style=\"font-family: Arial, sans-serif;\">\u00b7<\/span><span style=\"font-family: Arial, sans-serif;\"> <\/span><span style=\"font-family: Arial, sans-serif;\">Par ailleurs, le futur b\u00e2timent destin\u00e9 \u00e0 accueillir le centre de technologies avanc\u00e9es permettra \u00e0 nos \u00e9tudiants, aux demandeurs d&#8217;emploi et \u00e0 des professionnels de se former sur du mat\u00e9riel de pointe;<\/span><\/span><\/p>\n<p><span style=\"font-size: small;\"><span style=\"font-family: Arial, sans-serif;\">\u00b7<\/span><span style=\"font-family: Arial, sans-serif;\"> <\/span><span style=\"font-family: Arial, sans-serif;\">Divers partenariats avec des acteurs ext\u00e9rieurs tels que Bruxelles environnement; Apis bruoc sella; les Jardins de Pomone verront le jour dans le courant de l&rsquo;ann\u00e9e 2011.<\/span><\/span><\/p>\n<p><strong><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: small;\">Mon intention est de faire du campus du CERIA et de ces diff\u00e9rents instituts, les premiers \u00e9tablissements reconnus \u00ab\u00a0alimentation durable\u00a0\u00bb.
